Truffle Oil: versatile choice for lovers of all things truffle!

Summer is here and we’ve been inspired to share some fabulous recipes which make great use of the versatile Truffle Oil. We’ve discovered a few scrumptious recipes for you to enjoy which are all very simple to prepare and won’t over burden the palate now the warmer weather is here.

First up we have a classic combination of Asparagus and Poached Eggs with Parmesan and Truffle Oil. This is a definite favorite for me with a minimal ingredient list and preparation time of literally a few minutes. You fancy a light bite one moment and 5 minutes later ‘voila’ your meal is good to go! All you need to do is blanch your asparagus in salted water for 2 minutes and whilst they’re on the go, poach your eggs. To serve, simply lay the eggs on top of the asparagus and sprinkle according to taste with fresh grated parmesan and a drizzle of aromatic Truffle Oil.

Next up is another tasty summer treat which is bound to be a hit with guests at the barbecue this summer - Truffled Grilled Corn. Basically it’s a gourmet twist on the traditional corn-on-the-cob and I am sure you won’t be disappointed by this one. Once you’ve grilled your cobs whilst basting with a mouth-watering blend of garlic, olive oil and lemon juice, transfer to your serving plate and sprinkle over a generous amount of finely grated Parmesan and a delicious slug of White Truffle Oil immediately before serving.

And finally here’s a recipe I couldn’t resist as I am particularly fond of sweet new potatoes and these Roasted New Potatoes with Caramelized Onions and Truffle Oil sounds quite divine. All you need are your favorite new potatoes, a large yellow onion, salt and pepper and White Truffle Oil (although Black Truffle Oil works fine too) and you have it in the oven and out again in less than an hour ready to add to your summer buffet table.
